Barrel Program

Established in 2018, Thirsty Monk’s Barrel Program makes use of two new facilities to expand our brewing program to mixed fermentation beers and more complex blending projects.

The Barrel Room at Monk’s Flask – Asheville

Located in the adjoining space to Thirsty Monk’s Biltmore Park location, Monk’s Flask is the new home of our barrel collection in Asheville. Currently holding a selection of wine and spirits barrels, this facility allows for mixed fermentation Thirsty Monk beers.

The Woodshed – Denver

Established in 2018, our Denver Barrel House is known as “The Wood Shed”, and will house our budding sour beer program, led by Head Brewer, Brian Grace. The Wood Shed currently holds red wine barrels, in which we will blend brewing black, brown and red base beers to be inoculated with wild yeast and bacteria before the addition of fruit and eventual blending and bottle conditioning. The new barrel house is also home to two “solera-inspired” foeders, and a growing, diverse selection of other wine and spirit barrels.
