Screaming Monk Belgian IPA
Imagine a Monk on the top of a quiet mountain, taking a sip of this beer, and screaming "I Love Hops!" This beer is jam packed with citrus and earthy hops, well-complimented by background Belgian fruity esters. Body and bitterness balance to give an experience aggressive enough for the average hop-head, and complex enough for an appreciator of Belgian-styles. 7.1%ABV
Water is great and all, but Thirsty Monks prefer to baptize their thirst with beer. And what better spiritual sipper than this quenching, tasty Witbier with hints of citrus and a warming touch of spice. We called upon wheat malts, coriander, orange zest and our house Belgian yeast to create this divine drinking experience. It took a little more than just 7 days to create, but Holy Wit!, it’s good… 5%ABV

Small Batch Brother Noah
Smooth and decadent, this velvety chocolate Belgian Stout was brewed with two different chocolate malts, cocoa powder, oats and a touch of lactose to increase its already full mouthfeel. If that isn't dessert enough, we also added 14lbs each of French Broad Chocolate Peruvian and Nicaraguan nibs to the secondary fermentation. Notes of chocolate richness abound with prominent notes of dark fruits. The Belgian yeast brings it together for a drier finish. 8.4%ABV
Must Love Coconut IPA
If you like Piña Coladas and getting caught in the rain, or if you’re just in the mood for an escape from the typical IPA, this one's for you. Brewed with 100 pounds of toasted coconut and a blast of Citra, Centennial and Amarillo hops, this Belgian-style IPA is a totally tropical experience. Flavors of stone fruit, tropical fruit and–you guessed it–coconut whisk you away to an island oasis, with hints of spice and citrus peaking through the palm trees. A special release returning to the taps after many requests from its fans.
Woodstove Winter Ale
Brewed using freshly grated nutmeg, ginger and cinnamon, with just a hint of vanilla bean. The classic spice blend shines through in the nose and palate. Vanilla adds a certain silky richness, while the use of Belgian candi sugar gives this Winter Warmer a unique complexity. (7.1%ABV)
Fall Harvest Ale
A liquid tribute to autumn in Asheville, our Fall Harvest Ale was brewed with 100 pounds of roasted, locally-grown Candy Roaster squash and a touch of cinnamon, nutmeg, vanilla and clove. Notes of pie crust, toasted biscuit, harvest spices and dried fruit and a low, lingering bitterness give way to a dry finish, pairing perfectly with the crisp mountain air. It's like a windows-down drive up the Blue Ridge Parkway as cooler weather sets in—if you could pour that into a tulip glass.
Summer Table Belgian Ale
Perfect for patio sipping, this easy drinking Belgian Ale was brewed with summer evenings at the Monks in mind. A blend of Munich, Cara and Maris Otter malts shares the spotlight with the signature spice of our house yeast blend and a floral finish from East Kent Golding, Fuggle and Hallertau hops. Aromas include spicy clove phenols and fruity bubblegum esters. Flavors balance with biscuit malts and a very subtle hop bitterness, giving way to a dry finish.
Small Batch Belgian Fall Harvest Ale
Ring in the cooler months with this Belgian Autumn Seasonal Ale, fermented with fresh local pumpkins, giving it pleasant earthy notes, reminiscent of the smells and tastes of the WNC woods while the leaves are falling. The Belgian yeast interacts well with its earthiness and eaves you with a particularly dry finish. 8.2%ABV
Our very easy drinker for hot summer days, say hello to Euro Monk! This clean, crisp and refreshing brew was the result of cold fermenting and lagering our Belgian yeast. Why? Because we can. The result is a clean Euro-Lager-style with hints of a earthy Saaz hops, a small rye addition and a nice dry finish. 4.6%ABV
